When life gives you bananas....

The obvious thing to do when life gives you bananas, make banana bread. My apartment smells delightful right now.

This morning was difficult and I needed a good stress reliever this afternoon so while the washer swished my clothes around in sudsy water, I went to work in the kitchen.

Now I altered a few different recipes (hopefully it comes out alright). I try to eliminate sugar and oil from as many recipes as possible. Sooo honey and applesauce made great alternatives here.

What You Need (in the order you add them):
1/2 cup honey
1/4 cup of applesauce (not sweetened)
2 ripe bananas
1 egg
1 cup of flour
1/2 teaspoon of cinnamon
1/2 teaspoon of baking soda
1/8 teaspoon (or a sprinkle) of salt

Simple enough right?

How It's Done:
1. Preheat the oven to 350 and spray a 9x5 baking pan with some nonstick spray
2. Mix the honey and applesauce in a large bowl.
3. Mash up those bananas and add them in. Since I like to work with my hands, I literally smooshed them up in my hands and drop them into the bowl.
4. Add the egg and mix all wet ingredients until well blended.
5. Mix all dry ingredients (flour, cinnamon, baking soda, and salt) in a separate bowl. Dump the dry ingredients over top of the wet ingredients. Mix until well blended together.
6. Pour the mix into the pan and bake for 30-40 minutes at 350.
7. Take out, let cool for a few minutes, and enjoy!

Spoiler: It's sooo good. I put walnuts in half of mine. Now I need to fold my laundry and get dressed for tonight!
